From the cod specie, the innards are cleaned, it is salted and put to dry. It is eaten roasted (grilled), broken into pieces on a plate with olive oil. There are those who use it to make “pericana”, a sauce made of dried peppers, dried cod, garlic and olive oil. Typical in alicante area.
